It’s tempting — wrong, but tempting — to take the choreographer Paul Taylor for granted. He will be 80 this year. He has been choreographing since the 1950s. While the fortunes of other one-choreographer troupes have risen and fallen, his company has had an annual season at New York City Center Theater almost every year since 1977. (It’s Feb. 24 to March 14 this year.) Several of the biggest American ballet companies dance some of his best-loved works.
